- 1 head of cauliflower, medium to large
- 3 tablespoons heavy cream or sour cream
- 1 tablespoon butter
- salt and freshly ground black pepper

Preparation Trim the cauliflower and discard leaves. Cut it in half and place in a large saucepan. Cover the cauliflower with water and add about 1/2 teaspoon of salt.
Bring to a boil. Cover and reduce heat to medium-low. Continue boiling for about 15 minutes, or until the cauliflower is very tender. Drain well.
Mash the cauliflower with a potato masher until you have a nice, smooth consistency. You may also put some in the blender if you want a smoother mixture.
Mash in the cream or sour cream and butter. Add salt and freshly ground black pepper, to taste.
